Skinny Pictures Be Gone!…

So, we made it to our hotel in North Carolina, and I have internet again! YAY!!! I had Rice Chex for breakfast, and my usual bus salad (Romaine, Carrots, Broccoli, Cauliflower, Tuna, and Balsamic Vinegar) for lunch: I also sipped the 2nd half of my Multi-Green Kombucha from yesterday. I had 2, count em’, 2 or these explode on my yesterday! Talk about special times! The second explosion happened in our hotel room. My OH was in the bathroom, when suddenly he heard me screaming in the bedroom for help. He can rushing out to find me huddled in a corner with an exploding bottle of green slush wrapped in a towel desperately trying to “make it stop”! HAHAHA It was definitely one of my finer moments. Moving on…. Once we arrived at the hotel, I ate an orange and hopped online to check my email, etc…. Online, I found my OH had been posting old pictures on facebook. Some of these photos were from right around the time of my diagnosis. I looked positively disgusting! I was so skinny! It kind of makes me sad to look back at these photos and realize what I lost. I lost those years of my life, the memories that could have been made, the friendships I could have cultivated, the things I could have done. On the flip side, it also makes me grateful; grateful to my husband and family for sticking by my side and never giving up on me, grateful that to God for keeping me alive, grateful for the new mission I have in life and for the compassion for others it has given me. Those years changed me for the better. I can see that now, and I thank God for it. Here are the some before and after shots. It’s amazing what 2 years and a diagnosis can do! For anyone reading this who is struggling with a Gluten Intolerance or Celiac’s Disease, know that there is hope. Healing will come. I am LIVING proof!

Beans and Beautiful Weather…

Hello from gorgeous Columbia, SC! The weather has been absolutely G-ORGEOUS! I have been soaking up the sun as much as I possibly can. (Wearing a ton of SPF of course!) We don’t have free internet at the hotel. So, I am going to blog as much as I can here at the theater. Yesterday, when we arrived, I made my usual salad of Tuna, Romaine, Broccoli, Carrots, and Balsamic Vinegar. I was too hungry to go hunting for other food. I also had an apple. I ate dinner in a rush at the theater. Nothing too exciting or colorful, just a Dr. McDougall’s Pad Thai soup cup. I didn’t have time to take a picture. It was seriously an “inhale and go” kind of meal. Back at the hotel after the show, I did have something delectable and colorful, a Plain 0% Chobani with fresh local Blueberries and Strawberries. I know it’s hard, but please try to stop drooling! It’s just soooo pretty!!!!! Now, moving on to today…
I ate a quick bowl of Rice Chex this morning then hopped in the shower. One of the dancers, “L”, and I went to a natural foods store here in Columbia called Rosewood Market. It was A-MAZING! They even had Cream Hill Estates Laura’s GF Rolled Oats!!!! I have NEVER seen them in an actual store. I always have to order them online! Naturally, I bought a box as well as a few other goodies for lunch and dinner. I was so excited about both meals I forgot to take pictures until I was half way through with both! HAHA Here is my lunch: A crustless Spinach and Red Pepper Quiche and an Organic, Golden Delicious Apple. YUM!!!!!!!!! After lunch my OH and I walked around the city for a little bit, just enjoying the weather. Dinner was every bit as delectable as lunch. Giant White Beans and Basil in a fresh Tomato Sauce, Steamed Kale, Carrots, Cabbage, and Fennel, and a few Sami’s Bakery Garlic Millet and Flax Chips. I dipped the Millet and Flax Chips in the White Bean dish… SOOO FLIPPING GOOD! I will definitely be recreating this dish at home. On a separate note: I know a lot of people have a problem with Sami’s Bakery products because of cross-contamination. I have only had a problem once, and it was with their Millet and Flax Bread. I have never had a problem with their Millet and Flax Chips. I try not to eat them very often though, just in case. Today, however, I decided to risk it. Luckily, this batch seems to be fine. It was a lovely day spent with my husband and with beautiful food. LE SIGH!… happiness…. Tomorrow we head back to North Carolina, Morganton to be exact, for a one-nighter, then on to Atlanta for the weekend. See you on the flip side!

I am Turning Into my Great-Grandmother…

I have a confession… I am turning into my Great-Grandmother. I am an obsessive compulsive plastic-wear stealer! The evidence: Seriously! Every time I see a stack of plastic-wear I take 2 of everything. It is bad folks… very, very bad. But, at least I don’t stash Splenda in my pants like a certain person who shall remain nameless! (…hint: a drop of golden sun) Plastic-wear is a necessity when eating on the road. (at least, that’s what I keep telling myself…)
Whew… I feel better now that I’ve gotten that off my chest. Moving on to breakfast. I was very boring again and just had a bowl of Rice Chex. I told you I was a Cereal Monster! I thought about eating my Chobani, but I am going to save it. Plus, I read somewhere you shouldn’t eat yogurt and fruit in the morning. It is supposedly bad for your digestive system. I probably won’t adhere to this rule, but it was a great excuse for eating cereal again! 🙂

The Day is Over, and It Was Good…

LE SIGH… Today was a good day. My soul needed it. I was hungry around 4:30, so I made myself a bowl of Gluten Free Oatmeal with a banana and cinnamon mixed in. This held me over until after the show. My A-MAZING husband had these little beauties waiting for me at the theater. So, after the show I returned to my hotel room for a glorious bowl of Rice Chex and a few (…more like 8!) huge strawberries. YUMMY!!!!!! I realize I ate a lot of carbs today and not really any veggies. Oh well, I normally eat nothing but veggies. I’ll make up for it tomorrow. Now I am going to curl up in bed and relax. AHHHHHHH… sigh of contentment….

Productive Morning…

I have had the most glorious morning! I did a core yoga podcast and was feeling ambitious so… I RAN OUTSIDE! I think the last time I went running that didn’t involve a “dreadmill” was in elementary school! I only lasted a little over a mile. But, I STILL DID IT! I also ran up and down the hotel stairwell a few times. I’ve got to get my booty lifted for the summer! After my workout and shower I was a hungry little bear. I have been craving black beans like nobody’s business lately, so I made a Dr. McDougall’s Black Bean and Lime soup cup. <img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="http://3.bp.blogspot.com/_71Gme_x6Q_Q/SfX6oCf_BlI/AAAAAAAAAZI/QhD8SipzAts/s400/ These soups are a great “road” food. You just need to add hot water. I usually just run water through the hotel coffee pot. It works like a charm. I also had a delicious apple. This meal was a pretty big one for me, so I was quite full afterward. In fact, I am still pretty full! I normally eat smaller meals and will have a snack of two throughout the day. But, the soup was what my body was craving, so I went for it! After lunch, I busted out the shorts (first time of the season!!!) and ran some errands (Office Depot, the grocery store). One of the things I enjoy about tour is all the walking I get to do. Since I don’t have my own car, I have to walk everywhere I need to go. It’s something I wish I did more often at home. I stocked up on the usual suspects at the grocery store: Pre-washed and cut Veggies; Hearts of Romaine also pre-washed; Blueberries (because they are so “berry” good!); and a Chobani 0% Greek Yogurt for a treat Rice Chex; Tuna (x2); Dr. McDougalls Pad Thai soup cup

I also bought my OH his cereal of choice, Frosted Mini-Wheats, (I know… I know… I cringe every time I buy them!) and some skim milk.

And now for the Guest Blogger Food Review I promised you!

“P” tested the Enjoy Life Boom Choco Boom Dairy free Dark Chocolate Bar. Pros: Rich Taste; Smooth Texture

Cons: None!

The Verdict: on a scale of 1 to 5 YUMS; 5 YUMS What can I say, “P” loves his dark chocolate!

“G” reviewed the Enjoy Life Boom Choco Boom Rice Milk Bar.

“G” is actually lactose intolerant and a chocoholic, so this was the perfect product for him! Due to his extreme amount of experience with gourmet chocolate, he was a very critical taste tester with a discerning palate. Here is his review in his own words:

“I reviewed the regular chocolate bar and give it 3 out of 5 yums. It much resembles a Hershey bar. Nothing spectacular but its a good dairy-free alternative to those who cannot have a Hershey bar.”

And last, but certainly not least, “K” reviewed the Enjoy Life Boom Choco Boom Crispy Rice Bar. (Sorry no picture. Next time, “K”!)

“…gives it 3 yums. It very much resembles the Krackel Hershey bar with less “krackel” and more Hershey. Mild taste, no funny after taste. A good dairy-free alternative to Krackel and similar products.”

Back to My Regularly Scheduled Blogging…

I’M BAAAACK! It is now time to return to the blog-o-sphere! Thank you for understanding my much needed hiatus. Like fellow blogger, Gliding Calm, I am an introvert. My introverted personality doesn’t mean I don’t love people and hanging out with my friends. It just means that I seriously need “me” time. It is a lot of work constantly being around people! (My husband doesn’t count. I ALWAYS want to be around him!) That being said, the blog even felt like work. After having a long string of one-nighters and bus days, I just needed to be left alone in the evenings. Not that I don’t love my readers, but seriously, a girl needs her space sometimes! 😉 But, now I am back and ready to go! We are in Pembroke, NC today, then Columbia, SC tomorrow. The weather is G-ORGEOUS! LOVE IT! I hope it stays this way. Now on to the food! Here are a few new products I tried. I will just give mini-reviews of some of them.
Glenny’s Brown Rice Marshmallow Treat in Peanut Caramel
Healthy Benefits:
Whole Grain Brown Rice
100 Calories
Gluten Free
Low Sodium
Certified Organic and Vegan
Certified OU Kosher
Pros: GLUTEN FREE!!!; Good, peanut-y flavor; Low in Calories, Sodium, and Fat; Organic and Vegan; Made with Whole Grains; Reminiscent of the packaged Kellogg’s Rice Krispie Treats (P.S.- I hate when companies purposely spell words wrong to look “cute”!!!! Pet peeve!!!!)
Cons: Crumbly, not “gooey” texture
The Verdict: on a scale of 1 to 5 YUMS; 3.5 YUMS I would like to try this product again to see if I just happened to purchase a stale Marshmallow Treat. That was the consistency my Treat had, slightly stale. I will have to keep my eyes peeled. Ever’Mans’ in Pensacola was the first store I have come across that carried Glenny’s Marshmallow Treats, and unfortunately, I will not be going back to P’cola for a while due to the tour schedule. (I’m sort of stuck with Super Walmart… lucky me…) Glenny’s also has a great variety of flavors. In addition to the Peanut Caramel, they have: Raspberry Jubilee, Vanilla, AND Chocolate! Beat that Kellogg’s!
Moving on…
Justin’s Nut Butter
I discovered these handy packets of Nut Butter in a random grocery store in… I think it was Aurora, IL.
These Nut Butter’s are completely organic, dairy free, gluten free, and made without hydrogenated oils! They come in a variety of flavors: Classic Peanut Butter; Honey Peanut Butter; Cinnamon Peanut Butter; Classic Almond Butter; Honey Almond Butter; and Maple Almond Butter
I tried the Classic Almond Butter, the Maple Almond Butter, and the Cinnamon Peanut Butter. I have to say, the Cinnamon Peanut butter was TO DIE FOR!!!!!! SOOOO GOOD!!!!!!!!!!
Pros: Convenient Packets; Taste (OMG the Cinnamon Peanut Butter!!!); Organic; Gluten Free and Dairy Free; No Hydrogenated Oils
Cons: The Almond Butter, which I spread on a piece of millet bread to make a sandwich, needed to be eaten with something else, maybe a banana or some jam; I only had one packet of the Cinnamon Peanut Butter!
The Verdict: on a scale of 1 to 5 YUMS; Almond Butters- 3 YUMS; Cinnamon Peanut Butter- 5 YUMS Seriously, folks, you have got to try Justin’s Nut Butters! They will change your life! Now I just have to figure out where I can get more Cinnamon Peanut Butter!

Elbow Rice Pasta with Mild Chili Sauce, Pinto Beans, and Ground Chicken
Not going to lie… this was my least favorite of the Allergaroo Ready Made Microwaveable Pouch Dinners. The noodles were soft, but the beans were hard! The beans seriously took some time to chew, and the chili sauce was too sweet. It could have definitely used more of a chili kick. I guess for children the sweetness would be a positive thing, but not for me. I am a huge fan of spicy food!
Pros: Convenience; Low in Fat
Cons: Texture (soft noodles vs. hard beans); Sweet Sauce
The Verdict: on a scale of 1 to 5 YUMS; 1.5 YUMS

This morning, I had a bowl of Rice Chex. It was definitely a cereal kind of morning. Boring, I know, but yummy. I have a serious cereal addiction! I think I am going to go workout for a bit. I will post again a little later this afternoon with a guest blogger food review in addition to my own lunch post. Get excited! Until then, my friends!

I am so tired… I seriously have no words. Do you ever just crave “me” time. Seriously, I need to just be by myself for a day or two. I haven’t been taking pictures of my food because it’s just been so crazy. I have basically been eating the usual meals; salads, sweet potatoes, steamed veggies, cereal, oatmeal, and yogurt. I promise new food reviews are coming, courtesy of a few guest judges. Until I can get it back together, GOODNIGHT!

YAY FLORIDA!!!!!!!!!!!…

I AM IN FLORIDA YOU GUYS!!!!!! We have a one-nighter in Pensacola, the town where I grew up. It is so weird to be at my home theater. I’m sorry I have been so absent. These next couple of weeks are crazy. I’m talking one-nighter after one-nighter all over the map. We have been driving around like crazy people. My favorite road sighting thus far was a personalized semi-truck cab. It looked like a very expensive paint job, but was the most hilarious thing I had seen in a few weeks. The back of the truck read, “Peasefull Easy Feeling”! HAHAHA Do you think the painter realized he was spelling something so wrong, or was it the truck driver who was completely off base? Either way… HI-LARIOUS! My food has been boring too, just the usual salads, cereal, and veggie bowls. Dinner before the show was a fun concoction though. I had Gluten Free oatmeal with half a banana and Chocolate PB2!
Not very photogenic, but delightful none the less. After the show I had a small bowl of Rice Chex and chowed down on some veggies and hummus. I know, random combination, but oh so good!
This morning, I hit up the complimentary continental breakfast for some fruit (grapefruit, honeydew melon, and cantalope) and a strawberry yogurt. I wanted some cereal, but the milk they had was sour tasting. 😦 Bad news bears! The weather has been G-ORGEOUS! When we stopped for lunch, I made my salad (Romaine, broccoli, carrots, snap peas, blackberries, tuna, and balsamic vinegar) and sat outside to enjoy the beautiful day. The blackberries were a fun addition to my usual combo!
We arrived in good old Pcola around 2:00 so a few of us took a “field trip” to Ever’Man Natural Foods. It is a Co’Op not far from our hotel. I got some fun things for dinner tonight, and some new things for meals later on. I also got a juice at the juice bar. It was Apple, Celery, Ginger, and Beet juice. I think that was all that was in it… Anyway, I could only drink about 1/3 of it. I had to give the rest away. My stomach just couldn’t handle the acidity. 😦 Oh well… I’ll try again another time. Sorry no pictures. I forgot my camera. I have been a bad blogger lately! Oh, and would you believe I got a sunburn just from walking to the store and back! I swear, I am the whitest person EVER! Tomorrow we head to Macon, GA. We will be there for 2 whole days!!!! One of the dancers knows of a vegan restaurant near our hotel. We will definitely be checking it out! Until tonight!

Just a Quick Review…

Hello everyone! I’ve been stuck on a bus and in the middle of nowhere with sloooooow internet. So here is a quick recap of my eats over the last two days: (minus a bowl of Rice Chex, an apple, and an orange)
I dipped the crackers in my Pine Nut Hummus and finished off my Laughing Giraffe Organics Granola on my little yogurt and blackberry parfait. I will catch you all up more when I get the chance. Now, I desperately need to shower. Our bus call this morning was 4:30 AM. Needless to say, I rolled straight out of bed and onto the bus!
